Well it's Monday and back to the grind. The only difference is I don't dread Mondays anymore (at least not right now haha). This is day 5 of breakfast pastries and today we mixed up doughs for puff pastry, danish, and swiss brioche that we will be using the next couple of days. In between all these doughs, we made yeast doughnuts, pound cake, and Tyrolean chocolate cake with a crumb topping that is pretty much a coffee cake, a very good coffee cake I might add.
